First, I browned the chicken in my 6.75 Oval French Oven and pulled it out.
Then, I added chopped onions and bell peppers.
After those veggies softened, I added mushrooms.
I let the veggies cook down, and then I added white wine.
Then, I added pureed tomatoes in.
Then, I put the browned chicken back in, and let it simmer for 30 minutes.
Emily made salad and pasta, so we served the chicken and the sauce over pasta.
It was so much fun to make! This was very simple, and I'm sure it will be a regular menu item in my kitchen!
