I've made this dish twice since I discovered it on Pinterest. Once was when Bree and Brent came over for dinner, and once when Chad and Emily were over. This must be the perfect double date food!
I started by shredding a Costco rotisserie chicken. Then, I mixed the shredded chicken with cooked black beans, green chilies, and a spice mixture of garlic salt, onion powder, cumin, and paprika.
Then, I warmed corn tortillas over the stove, and started covering them with enchilada sauce and layering the tortillas and chicken mixture.
I poured the reminder of the single can of enchilada sauce over the three layers of casserole I stacked.
I topped with cheese and baked it for 45 minutes! This was a wonderful meal that would seem very heavy, but because I used only one can of enchilada sauce and sprinkled a little cheese on top, it turned out to be fairly light.
I love this dish and would make it many times over! It's perfect for feeding 4 or more people. YUM!
