Everything Chicken!

Last week, I was able to make my everything chicken. This is one of my favorite dishes. I love it because it's so easy and versatile. I've made it on the grill and in the oven, and it tastes great both ways! I start with chicken wings (but any part of the chicken will work). Then, I season it with chili powder, garlic powder, onion powder, salt, and pepper. Then, I drizzle the pieces with olive oil so they can crisp up when they cook!

For some variety, I tried my seasoning on pork chops. Then, I put those on the grill too. For a starch, we got the trader joe's garlic and herb pizza dough . We threw that on the grill to create bread! YUM!

FOOTBALL SEASON! (GO CHARGERS!)

 In honor of the start of football season, I'd like to take a walk down memory lane. I found some pictures of the food we've made for football related events. My favorites have been deviled eggs with bacon, Adrienne's ADDICTIVE spinach dip, wings, five layer dip,  and other small bites. I can't wait for more football, and more delicious food this season!

Comfort chicken results

So the aesthetics of this dish isn't amazing, but the flavor makes up for it! Lindsay and I let the french oven bake at 300 for about 45 minutes. Then, we pulled it out and opened it up to check to see if all the food was done.  The result ended up being almost a stew-like dish. The juices from the veggies, chicken and potatoes all melded together and created a super-exciting meal! YUM!!!



The picture was taken after we dished out most of it, so most of the potatoes and veggies are gone. Can't wait to use the oven again!!!

Lindsay and Melissa's Comfort Chicken

       So my brother, Roni, came home from his camping trip with a bunch of extra chicken thighs. We decided to brine them last night. When I got home from Jury Duty today, Lindsay and I decided to make our own version of comfort chicken. We browned the chicken, and sauteed onions and portobello mushrooms with white wine. Then we added the browned chicken on top, and finally topped it with potatoes. Currently, it's in the oven baking. Final product pictures to come!

Last Year at the Acuna House

Last week, Greg, Amy, and Aiden invited Scott and I over for dinner. Since I LOVE to cook, and I have some time off before I start work, I decided to make a rack of lamb. This was only my second time roasting this dish, but I think it turned out even better than the first time! I decided to grill artichokes and roast potatoes for the sides. YUM!
